The right way is not always the easiest: for Daniel Moser, the way to the perfect coffee begins on the plantation. In our "escuela de cafe", the plantation in Costa Rica (San Vito), we have experienced coffee cultivation ourselves. Part of the coffee we process comes from our own cultivation areas.

Daniel Moser only processes Arabicas that are native to countries between 23° north and 25° south latitude. In the highlands between about 1,000 m and 1,800 m, the beans develop their characteristic excellent taste, depending on the growing area. And that's what counts for us.

The ripe, red coffee cherries are picked by hand ("picking" method) and the pulp is gently removed using wet processing. This is followed by sun drying and manual sorting of the green coffee beans according to size. If you are interested in cultivation, harvesting and care and want to lend a hand yourself, feel invited to gain your own practical experience with us.

  the MANUFACTORY

The coffee manufactory Daniel Moser fulfills all the tasks that we expect from a center “from
crop to the last drop”.

It offers space for the green coffee store, the roasting plant, the presentation and training rooms, the machine and accessory store and the technical maintenance center. The scent of freshly roasted coffee penetrates every corner.

When we get the orders on their way every day, the customers are called by name. We process each order individually - it couldn't be fresher.

  the PERFECT ROAST

As the "roasting lady", Kathrin Schärf-Hönig is the expert at the Daniel Moser house when it comes to developing the aroma of a perfect coffee.

The single-variety roasting and the refinement of the high-quality green coffee varieties take place in a gentle long-term roasting process. It takes between 15 and 20 minutes for the green coffee to develop its incomparable aroma and for acids to break down. The beans are then cooled with air; this process is also very gentle and not designed for speed and maximizing production.

After cooling, the coffee, still sorted, is temporarily stored in specially manufactured silos. The numerous different types are now available for further processing. Depending on the recipe, the single origins are mixed and processed into the desired individual blends. "Blending after roasting" is our law.

Mag. Wolfgang Spiller has been the main shareholder of the coffee roastery and owner of the Daniel Moser brand since October 2019.

In the luxury food industry, he gained international experience at two coffee companies and also works as a consultant, board member and supervisory board member. His mission is to successfully lead the life's work of founder Roman Schärf into the future. The commitment to the highest quality has absolute priority.

ROMAN SCHÄRF

Founder of the Daniel Moser brand and unmistakable ambassador for perfect coffee enjoyment. After rediscovering the first Viennese coffee house, which reopened as "Daniel Moser" at Rotenturmstrasse 14 in the early 1980s, he set up his own private coffee plantation in San Vito in Costa Rica. In 2002 he founded another coffee factory in Wiener Neustadt and is now available to the company as a senior consultant.

is one of our longest-standing employees and partners and was very successful in well-known houses from a young age. Due to his national and international experience, he enjoys our complete trust and fills a leading consulting position at Daniel Moser. He has also been leading the team of our "machinists", the baristas, for many years.
